Zucchini is plentiful at the market right now and you can find it at most of the farmers booths on Wednesdays and Saturdays. They range in size from small to VERY large but it is good to know that in the world of zucchinis size does matter. The smaller the size the more flavor it will have while the larger zucchinis may not have as much flavor but are perfect for soups, breads, and cakes. Zucchinis are packed full of Vitamin C as well as Vitamin A which is good for the eyes, so it turns out carrots aren’t the only one. Leaving the skin on when you prepare it will insure that you get these benefits as well as all the beneficial antioxidants, which researchers have been finding. But as with most produce when you leave the skin on it’s important to buy organic, which is easiest to find at the market.

  • zucchini + basil + garlic
  • zucchini + cream + Parmesan cheese
  • zucchini + eggplant + garlic + onions + tomatoes 
  • zucchini + pecorino cheese + pecan oil + pecans
