This week we learned a lot about balsamic vinegar from the owners of Favored Flavors, a tasting shop located right here in Downtown Lynchburg. Some little-known facts include:
Balsamic vinegar has a long history and can date back to the Holy Roman Empire in 1046.
It can sell for as much as $200 an ounce.
Traditional balsamic vinegar begins with grape must —whole pressed grapes complete with juice, skin, seeds and stems.
Traditional balsamic vinegar is thicker and more concentrated than most versions you see in the grocery store because as it ages in barrels, it evaporates.
