Heidi GoCar (Heidi Godinez Cartas) 

IMG_0774I’m honored to present one of my dear friends, Heidi, as this weeks featured locavore and someone I would not have met had it not been for the market. She is dedicated to eating good local food, especially spinach. A brilliant robotics engineer, tequila connoisseur, and avid biker she calls downtown her home (for now) and never stops meeting new people and connecting friends. I could sing her praises a lot longer but here is what she said about why she eats local food: 

What do you like best about coming to the market?

I grew up on a farm back in Mexico, so I know what local and fresh food tastes like and honestly, the market is my favorite Lynchburg spot. It has it all. Not only can you buy good quality products for your meals, but you also get to meet wonderful people and have a great time. Indeed, I met my best friends at the market!

Why do you choose to eat local food?

Because of the sustainability of it. These days the economy is so volatile and the world is overpopulated, local food is a perfect solution: money stays local, I eat fresh and healthier and at the same time I know I am impacting my community in a positive way. In other words, eating local makes me happier.

What’s your favorite fruit and vegetable? And why?

My favorite fruit is an apple and vegetable, can I choose two? Peppers and spinach. I love all fruits but apples are so diverse. I can eat it alone, in salads, or as a pie. Peppers remind me of home when I eat them even though they are not as hot, and spinach, what can I say? I love spinach, I eat it all day long, in smoothies, on spinach sandwiches and in salads.

What are you going to make this week with your local produce?

I got lot of peppers, carrots, squash and basil too, so I am going to make stir fried basil veggies.
