Kale has really had a comeback in the past few years and I love it because it is really easy to make into a great salad in a short amount of time. I prefer not to cook it but it does have a tough texture that can be difficult for some to enjoy. So if you’re looking to throw one last dish together for Thanksgiving or you just need something quick for a busy day, garlicky kale can come in really handy. (Even though we don’t have a Whole Foods here some of you may be aware that Whole Foods makes the best Garlicky Kale around and they may even have invented it.. if that’s something you can invent.)
The ingredient list is low and most likely you’ll have the ingredients in your fridge (except Tahini which you can easily get at the grocery store). So grab the kale you got at the market (curly works the best), give it a good rinse and de-stem it. I usually just rip the ‘leafy’ part of in chunks but if you’re into kitchen gadgets they do have these tools that can come in really handy. Once you’ve done that, chop the greens into good bite sized pieces (but don’t go too small!). Now for the dressing you’ll need:
- fresh lemon juice
- soy sauce (or liquid aminos)
- cloves of garlic
- apple cider vinegar or red wine vinegar
The great thing is that you will need 2 Tablespoons of each of these ingredients. Whisk them together and add the chopped kale, and mix until all the kale is evenly covered. If you have time refrigerate for 1-2 hours to let the dressing break down some of the kale’s toughness.
