This week we learned a lot about balsamic vinegar from the owners of Favored Flavors, a tasting shop located right here in Downtown Lynchburg. Some little-known facts include:

  • Balsamic vinegar has a long history and can date back to the Holy Roman Empire in 1046.

  • It can sell for as much as $200 an ounce.

  • Traditional balsamic vinegar begins with grape must —whole pressed grapes complete with juice, skin, seeds and stems.

  • Traditional balsamic vinegar is thicker and more concentrated than most versions you see in the grocery store because as it ages in barrels, it evaporates.
